The Programme

The objective of this short course is to provide an overview of risk analysis and explain the key underlying concepts and principles which underpin this area of activity. It will also illustrate the variety of hazards in the food supply, both chemical and biological. In the case of chemical hazards, to demonstrate that it is the chemical structure of a compound that is the determinant of potential toxicity, and not its origins whether man-made or natural.
